Fish Traybake

Yields1 Serving
 4 fish fillets ( 1 per person )I used salmon the OH had cod
 1 head of fennel ( sliced)
 500g new potatoes par boiled
 2 red peppers chopped
 3 shallots halved
 6 garlic cloves unpeeled
 1 lemon cut into quarters
 A good splash of olive or rapeseed oil
 Salt and pepper
 Half a cooked chorizo sliced
 A few asparagus spears
 You can add any veg you like ( go freestyle )

Heat oven to 180C

Put all veg into a roasting tin

Squeeze over the juice from 2 of the lemon quarters

Add the oil

Season with salt and pepper and toss well

Put in the oven

Toss again every 10 minutes

After 25 mins add the sliced chorizo and mix

Sit the fish onto of the veg and put in the oven until the fish is cooked

This will take about 10-15 minutes depending on the size of the fillets

Serve with crusty bread to mop up the juices
