Halogen Fried Chicken & Pancakes

Comfort food doesn't come much better than this. Serve it hot or cold, as a snack whilst watching the football,in a bucket- KFC style-at a picnic or just as a midweek dinner. This recipe will become a family favourite in no time. I've teamed it with a batch of Pancakes-medium sized and mini, which are quick and easy to prepare whilst your waiting on the chicken to cook, but you can adapt it for larger ones or even waffles if you prefer.  8 Pieces of Chicken (drumsticks & thighs)
 250 ml Buttermilk
 1 tbsp Worcestershire Sauce
 200 g Plain Flour
 2 tsp Sea Salt
 1 tsp Black Pepper
 1 tbsp Paprika
 ½ tsp Cayenne Pepper (optional)
 1 tsp Oregano
 10 dashes Spray Oil
 For The Pancakes
 100 g S.R. Flour
 1 Egg
 50 g Sugar
 ¼ tsp Bicarbonate of Soda
 A splash of milk
 1 tsp Oil

Prep:-
Put the chicken in a bowl and pour over the buttermilk and Worcestershire sauce. Turn the chicken in the buttermilk mixture to ensure its coated, cover with clingfilm and chill in the fridge for at least 2-4 hours.

Put the plain flour in a shallow dish or bowl. Add the salt, paprika, cayenne pepper, black pepper and oregano.Mix all the ingredients well.

Take one piece of the chicken with tongs and shake lightly to remove any excess buttermilk. Drop the chicken into the flour. Turn until the chicken is nicely coated in the spiced flour. Remove with tongs and put on an ovenproof tray. Do the same with the rest of chicken until its all coated.

Heat the Halogen to 180°c
Place the chicken in the oven-low rack.
I use a crisper tray from the £shop
Spray liberally with oil.
Place the lid on and cook for 20-25 mns.

Turn over and repeat-spray and cook for a further 20-25mns or until cooked through.

As your waiting for the chicken to cook make the pancakes.

For the Pancakes

Sieve the flour and sugar into a bowl
Add egg and whisk into sugar and flour.
Gradually add splashes of milk and whisk until smooth.
You want a relatively thick, smooth batter, about the same consistancy as double cream

Moisten a paper towel with vegetable oil and then use this to grease a thick based frying pan .

Heat the pan on the med/high heat and when it is hot, spoon in some of the batter-I used a ladle for the lge and a teaspoon to get the small ones.
As it starts to bubble(2-3mns) on the surface, turn the pancake over.
Once cooked (1-2mn) scoop out onto a plate
Keep warm as you do the rest
I got 6 medium and 18 sml

Remove the chicken from the oven and drain on some kitchen roll.

To serve:-
Place a medium pancake in each bowl/plate, add the chicken pieces, scatter over the mini pancakes and drizzle with maple syrup, add a side salad.

Easy swaps:-
Chicken for Turkey.
Oregano for Mixed herbs.
Cayenne for Chilli powder.
Pancakes for Waffles.

Tip:- You can buy buttermilk- I had none but its easy to make your own- Simply mix milk and lemon juice together. Use the ratio 1 cup-480ml milk to 1 tablespoon lemon juice.Allow the mixture to rest and curdle. It only takes a few minutes.Then stir and use!

Tip:- add 2 tbsp of Cornflour and more milk to the pancake batter to make waffles.
