Creamy risotto
Melt butter in a pan
Add onions,mushrooms,garlic and herbs
Stir till softened
Add dry rice and stir into ingredients for a minute or so
Dissolve the stock cubes in the water and add to rice
Stir until all ingredients are mixed then cover pan with lid and reduce heat
Do not stir again until all stock is absorbed -20mns appr
Add the soft cheese,chives and seasoning and stir gently
Put lid back on,Turn off heat and leave for 3-4 mns
Serve as a main course with crusty bread or as a side dish with chicken or pork
