Glazed Gammon steak with pineapple relish

A speedy dinner full of flavour

 2 Gammon steaks
 1 Small onion diced
 2 tbsp Pineapple pieces
 4 tbsp Pineapple juice
 1 handful of sultanas (optional)
 1 tbsp Butter
 1 tbsp Oil
 2 tbsp Soy sauce
 2 tsp Brown sugar
 100 ml Water

Cot through the rind of the steak at 1" intervals to prevent it shrinking or curling up

Heat 1/2 the oil and butter and fry the onion till soft.

add the soy sauce,brown sugar and pineapple juice,stir through and simmer till caramelized then set aside.

Add the remaining butter and oil to a pan on a med/high heat,place the gammon in the pan,fry for 2 mns each side to sear, then lower the heat.

Add the onion relish to the pan, making sure to coat both side of the steak

Add the water,turn the heat up and let the glaze reduce slightly as you fry the steak for another 3-4mns each side, adding the pineapple pieces in the last minute to warm through

Serve with mash potatoes and mixed veg

Cauliflower mash goes well with this too.
Sub the soy sauce for balsamic vinegar
