Goats cheese,Prosciutto and Melon Salad

Salad can be as adventurous as your imagination. "Why do I need to be shown how to make a salad?" I hear you say. I'm sure you don't is my answer but we all need a bit of inspiration sometimes...whether its with what combination goes well together or with what flavours are good for the dressing. This combination of salty prosciutto,tangy goats cheese and refreshing melon is yummy with this sweet and tangy dressing .This step by step method is just a guide to help and then you can adjust it for your families tastes.  100 g Prosciutto
 75 g Goats Cheese
 ½ Melon
 100 g Baby Spinach
 2 Shallots
 2 Spring Onions
 6 Cherry Tomatoes
 2 tbsp Sesame seeds
 1 pinch S&P
 2 tbsp Lemon juice
  For the Dressing
 1 tbsp Olive Oil
 2 tsp Balsamic glaze
 1 tbsp Mild mustard
 1 tbsp Honey
 1 tsp Wholegrain mustard

Prep:-finely chop 1 shallot (for the dressing)and slice the other one thinly (for the garnish).
Slice the Spring Onion.
Slice the cherry tomatoes.
De seed and Slice the melon into 1" chunks

Add the Olive Oil,Balsamic, Mustards and Honey into a bowl and stir well then add the finely chopped Shallot. Set aside

Add the Sesame seeds to a dry pan

Heat on a low heat till toasted(4-5mns) then set aside to cool.

Add the Spinach to your plate/bowl. You can shred it if you prefer.

Add the Prosciutto-roll it up or arrange in anyway you like.

Add the Melon chunks

Add the Goats cheese in small chunks

Add the sliced Shallot and Spring onion

Add the Cherry Tomatoes.

Drizzle the dressing over

Drizzle over the Lemon juice.

Season with S&P if needed.

Scatter over the Sesame Seeds.

Serve with mixed grain crackers, Crusty bread or a roll.

Easy swaps:- Prosciutto for any cooked ham or cooked bacon.
Goats cheese for Brie or any soft cheese.
Melon for Water melon, pear or sliced apple.
Sesame seeds for Pine nuts.
Shallots for red onions
Spinach for Iceberg lettuce or any Salad leaves
