King Prawn Linguine

This is my go-to 10minute meal when I don't feel like cooking. There's very little cooking involved so its my version of fast food. Switching my usual spaghetti for Linguine and my usual basic prawns for King Prawns makes this just a little bit special. The creaminess of the soft cheese pairs really well with the Linguine(little tongues) as its known making the sauce rich and silky. This recipe is for 2 people but can easily be adapted to feed 4.  150 g Linguine
 140 g King Prawns(cooked)
 130 g Soft Cheese
 100 g Spinach
 100 g Frozen Peas
 1 Small onion(optional)
 1 Handful of mixed peppers (optional)
 1 tbsp Butter
 1 tsp Oil
 1 tsp Garlic granules

Prep:-
Take the Prawns out of the fridge 30 mns beforehand.
Slice the onion and peppers or use frozen

Bring a pan of salted water to the boil. Add the pasta, lower the heat and simmer for 8-10mns

Meanwhile add the oil and butter to a pan on a low/med heat.
Add the onions and peppers and fry for a few minutes till soft.
Skip this step if not using.

Add the Spinach, peas & garlic and fry for a few minutes

Add the Prawns and continue to fry gently for 2-3mns

Drain the pasta and add it to the Prawns along with a ladleful of pasta water.

Add the soft cheese and fold through the pasta till everything is coated. Stir gently.

Add some pepper and a little grated parmesan (optional)

Serve with crusty bread
