Lentil and vegetable Cobbler

Very filling, very cheap and very warming. perfect for cold winter days.

Yields4 Servings
 1 onion, diced
 2 garlic cloves, crushed
 1 tbsp paprika
 2 potatoes, chopped
 2 carrots, chopped
 1 parsnip, chopped
 100 g red lentils
 1 l veg stock
 150 g self raising flour
 65 g butter
 70 ml milk
 100 g grated cheese

Fry the onion and garlic until softened

Add the paprika and stir well

Add the carrots, potatoes and parsnip and stir well

Add the red lentils and then enough of your stock to cover - you may need to add more as the lentils soak it up

Cook for around 20 minutes until the potato is soft

Make the cobbler

Mix the flour and butter until it resembled breadcrumbs

Add the milk and stir to make a dough

Roll out and cut into rounds

Pop on top of the lentil mix and grate cheese over

Pop in the oven for 15 minutes at gas mark 6 or 200c
