Peel and very thinly slice the potatoes ( again I use a mandolin )
Heat the oven to 190C
Melt the butter in a frying pan over a low heat
Add the onions and fry for about 5 minutes or until cooked but not coloured
Add in the potatoes
Season well with salt and pepper
Turn the potatoes occasionally
Cook until just starting to colour
Put them into a baking dish
Cook for at least an hour or until the top is crimping and the other layers are soft
