This recipe was cobbled together by what I found in the reduced section of the supermarket- a packet of sausages, and a mixed veg medley(pepper, onion,butternut squash, courgette) I added some spices, potatoes ( Farmfoods have a bag of frozen chopped potatoes that are perfect for this) some cooked bacon,and a bit more veg and had a tasty filling meal in no time. This can of course be adapted to suit what you have available and of course what your family likes.... Why not give this a try and let us know how you get on in the comments below. Prep :-
Measure out and mix your dry spices.
Chop the pepper.
Slice the tomatoes (optional)
I've added a pic of the potatoes and veg mix for reference.
Add the oil to a pan, heat on med/high, and add the sausages
Fry for 3-4 mns...You want to colour them to add flavour but not cook them through. Set aside.
Add the potatoes into the same pan on a low heat. Sprinkle over the spice mix and stir through till
they are coated but not cooked.
Add the veg pack plus chopped pepper to an ovenproof dish
Add the sausages and bacon.
Top with the potatoes
Pour in the stock.
Add the tomatoes
Cover with foil and add to the Halogen oven.
Cook @175° for 45mns.
200° for conventional oven. Same timing.
Remove the foil and Cook for a further 15-20mns till the potatoes are charred.
Drizzle over the sweet Chilli sauce and Pesto. Stir through.Taste and adjust the seasoning if needed. You can thicken the sauce with a little cornflour if needed
Divide into bowls or plates.
Serve hot with a garnish of Spring onion and crusty bread or toasted pitta to dip in the sauce.
Easy swaps:-
Pack of mixed veg for any veg.
Frozen potatoes for fresh
Spice mix for your own or a packet.
Sweet chilli sauce for Tomato paste.
This can become a one pan dish by adding everything into a casserole dish, mixing the wet and dry ingredients together, pouring it over the sausage and veg and baking for 1- 2 hrs in the oven at 200°
