Mexican Eggs

Yields1 Serving
 1 sliced onion
 2 or 3 peppers sliced
 1 finely chopped red chilli
 1 tspn oregano
 1/2 tspn cumin
 1 tblspn sugar
 1 tin chopped tomatoes
 1-2 tspns smoked paprika
 1 tin mixed beans ( optional )
 4 eggs
 Chopped coriander
 A little oil
 2 finely sliced garlic cloves

Put some oil in an ovenproof pan and fry off the onions for a couple of minutes

Add the garlic and spices fry for a couple of minutes

Add in the slice peppers and cook for 4-5 minutes

Now stir in the spices , sugar and tinned tomatoes

Simmer for about 5 minutes until the sauce thickens

Season with salt and pepper

Make 4 wells in the mixture, break an egg into each well

Bake in a preheated 200C oven until the whites are set and the yolks are soft

9

Serve scattered with chopped coriander . A crisp green salad and garlic bread are great accompaniments
