Fill with any jam and cream.
175g sugar
175g s/r flour
175g butter
3 eggs
1/2tsp vanilla
200ml double cream whipped
Jam.

1. Pre heat the oven to 180d

2 Cream the sugar and butter together till pale and fluffy

3. Mix the beaten eggs and flour a little at a time till all combined

4. Spoon mixture into muffin tin or cases .

5. Bake for 15 mins

6. Let cool then cut in half and spoon cream and jam.
