Mushy Peas

Perfect with fish and chips , delicious with faggots

 225g dried marrowfat peas
 2 tablespoon bicarbonate of soda
 Salt
 Sugar
 Mint sauce ( optional )

Put the peas into a large bowl

Add the bicarbonate and cover with 300ml of boiling water

Stir to make sure the bicarbonate has dissolved.

Let them soak overnight, or for a minimum of 12 hours.

Drain the peas

Put them in a large saucepan,

cover with boiling water and bring to the boil.

Add a tspn of sugar and a little salt

9

Lower the heat and simmer for 20-30 mins or until the peas have softened and turned mushy

10

Stir through a tspn or 2 of mint sauce if using
