6 carrots, sliced
1 beetroot, peeled and diced ( wear gloves to do this )
1 large onion, diced
3 celery sticks, chopped
2 cloves garlic, whole
1 bay leaf
500 ml 500ml veg stock
Salt and pepper

Put everything in a large pan.

Bring to the boil.

Turn down to a simmer until everything is softened.

Remove the bay leaf.

Whizz with a hand blender.

Add the basil.
