Onion Relish

A great accompaniment to any cheese board or picnic

 4 Onions sliced finely
 1 Knob of butter-7g appr.
 1 tbsp Oil
 2 tbsp Brown sugar
 2 tbsp White wine vinegar
 1 tbsp Balsamic vinegar or glaze
 1 tsp Handful of raisins-40g
 ½ tsp S&P

Add the butter and oil to a pan with the onions.Fry over a gentle heat and sweat till soft

Add the S&P and stir in the sugar letting it dissolve

Add the vinegar,balsamic & raisins

Simmer for 5-10 mns stirring till the liquid has reduced and become sticky.

Serve with cheese and crackers or chunky bread

Tip- exchange the white wine for red wine vinegar for a change
Tip-if it becomes too thick add a little more vinegar or water
Tip- store in a sealed container for 2-3wks
Tip- makes a lovely gift for a cheese lover
