Paprika Pork Stew

A warming casserole with the heatand spice of paprika

 500g pork - shoulder cut into chunks
 1 onion sliced
 1 clove garlic minced
 2 sliced peppers
 2 tspn smoked paprika
 1 tin chopped tomatoes
 1 tsp tomato puree
 200ml chicken or vegetable stock
 200ml crème fraiche
 Chopped fresh parsley
 Salt and pepper
 A little oil
 1tblspn flour

Put the flour , salt and pepper into a bag and shake

Add the diced pork and toss to coat in the flour

Heat the oil in a pan

Add the pork and brown on all sides

Remove and add in the onions , pepper and garlic , fry for a couple of minutes

Add the purée and paprika and cook for 2 minutes

Add in the tomatoes and deglaze the pan

Add the pork back in along with the chicken stock put on a lid and cook on the hob for 1 hour, in the slow cooker for 6 hours, in a pressure cooker for 15 minutes or in a 160c oven for 1.5-2 hrs.

Remove the lid , stir through the creme fraiche

Serve sprinkled with parsley - You could add some other vegetables to this or even some chick peas
