Peanut butter Pancakes

Perfect for an energy boosting lunch on the go.

 100 g Self Raising flour
 50 g Sugar
 1 Egg
 2 tbsp Peanut butter(crunchy or smooth)
 ¼ tsp Bicarbonate of Soda
 60 ml Milk
 1 tbsp Oil

Sieve all your dry ingredients into a bowl- flour,sugar,bicarb.

Add the egg and half the milk and whisk, continue whisking as you add a little milk each time till you get a smooth batter like double cream

Add the peanut butter and whisk till smooth- you may need to add a little more milk to loosen up the mix

Put your pan on a medium heat add the oil and wipe over with a paper towel to remove the excess

Using a small ladle or soup spoon add your batter to the pan and cook for 2-3mns(if your frying more than one leave a little space between as they will spread out a bit)

When you see bubbles appear on the surface it's time to turn them over using a flat turner or spatula.

Let them cook for a further 1-2mns

Serve warm.
These are lovely on their own or with your favourite toppings
