Pineapple, Custard and Coconut Tart recipe

This pineapple, custard and coconut tart is a real throw back recipe. It is not a dish that yoi will see readily available and I don't think there are many recipes for it around and for the life of me I don't know why because it is delicious! I mainly make this in the summer as it is so light and refreshing. My family always request it when we are having a barbecue which suits me fine because I can make it in the morning or even the night before and just keep it in the fridge until we are ready for it. Yields1 Serving

 You will need one ready baked sweet tart tin
 A tin of pineapple in syrup or juice it's up to you
 Custard , a tin , a packet , made totally or made with a custard mix , it's your choice
 Desiccated coconut

Mash down your pineapple by hand or with a blender , leave a few chunks , drain well and put on base of tart

pour over the COLD custard

Toast the coconut under a grill

When it's cooled sprinkle on top of the custard

Put in fridge to chill for at least an hour before serving
