Yields4 Servings

 2 Courgettes chopped
 1 Aubergine chopped
 2 Red onions chopped
 2 Peppers chopped
 4 Tomatoes chopped
 1 tbsp Tomato purée
 Dash oil
 Salt and pepper
 4 Crushed garlic cloves
 2 tbsp Fresh basil chopped
 Dash red wine vinegar ( optional)

Heat the oil in a pan add the onions and soften for a few minutes

Add the garlic and stir when it starts to release its aroma add all the other veg except the tomatoes

Sit on a low heat .After 10 minutes add the tomatoes

Stir through and cook for another 10 minutes. Now add in the tomato purée and salt and pepper

Mix well and allow it to cook out for at least 5 minutes

Stir through the herbs and serve

If it’s too thick let down with a little red wine vinegar
