Roasted red pepper and butternut squash soup
Ingredients
1 Butternut squash cubes
1 Large red onion diced
3 Sliced garlic cloves
Pinch chilli flakes
2 Pints veg stock
Salt
Pepper
Butter or butter frylight
1 Tin tomatoes
2 Roasted red peppers
Directions
Melt the butter or heat the frylight
Add in the onions and sauté for a few minutes
Add in the garlic when it releases its flavours add in the squash and cook for 5 minutes
Add in everything else
Cook until the vegetables are softened
Blitz with a hand blender
Or do everything in your pressure cooker and cook on soup for 8 minutes . QPR then blitz
