Slow cooker beef stew

 200g diced beef
 2TBSP flour
 2TBSP oil
 6 carrots diced
 1 Swede diced
 2 large onions quartered
 4 large potatoes diced
 4 beef stock cubes
 2 bay leaves
 Dash of Worcester sauce

Put the flour and beef in a freezer bag and shake to coat

Heat oil in a pot and add beef and brown

Put 2 litres of water into the pot and scrape deglaze the pan

Add all the ingredients to the slow cooker

Cook on high for 6-8 hours

  1. A couple of times I added potatoes in the stew and cooked it in the sc, the potatoes came out … leathery! What am I doing wrong? I experimented with more or less liquid but the potatoes came out the same

  2. Made this recipe for 2 adults so halved it as we only have a small slow cooker that wouldn’t have taken that quantity of water. However that meant the amount if meat was really tiny so next time I would halve everything except the meat. Really low in calories. Felt if needed bread with it as it was quite watery.

  3. We don’t like Swede or other veg like that. If I double the carrots would replace the Swede. I would then serve with other veg like broccoli or would it be too much carrot.
