Slow Cooker Lemon Meringue Fudge

Chocolate,Lemons, Meringue, fudge ....what's not to like? With just 4 ingredients this is one of the simplest easy fudge recipes that you can get. The subtle lemon flavour offsets the sweetness of the white chocolate. It's a soft set fudge so is best kept in the fridge to keep it from being too sticky, but you could coat it in a little icing sugar or wrap it in a greaseproof paper casing to enable you to hold it without getting sticky fingers. The step by step pictures give you a handy guide on how to make it so its a good one for the children to try out.  600 g White chocolate
 411 g Lemon Curd
 The Zest of 1 lemon
 2 Meringue nests

Break the chocolate into chunks and add to the Slow Cooker

Add the full jar of Lemon Curd

Add the Lemon Zest

Switch the cooker onto Low and cook for 80minutes without the lid.

Once the chocolate has melted-(5-10mns) stir everything together & Beat well or stir vigourously every 10-15 minutes thereafter

Line a tray with greaseproof paper

Pour the fudge into the tray

Crumble over the meringue and press it down lightly with the back of a spatula or spoon. Let it cool

Before placing in the fridge Score into bitesize squares with a knife. Then put in the fridge for 4-6 hrs or overnight if possible

Remove from the fridge,lift out of the tray and peel the greaseproof paper away from the sides.

Follow the score markings from earlier slice the fudge into bitesize pieces

Enjoy. This is a soft set fudge so is best kept in the fridge till you are about to eat it.
