Soda Bread

Yields1 Serving
 500g plain flour
 2tspns bicarbonate of soda
 1tspn fine sea salt
 400ml of butter milk or a live yoghurt
 A little milk if needed

Heat oven to 200c

Put the flour , bicarbonate , and salt int a bowl . Stir well , make a well in the centre and pour in the buttermilk , stir well to combine . If the mix is a little dry add in milk a tblspn at a time . It needs to be soft and almost sticky

Tip it onto a lightly floured board and knead it for about a minute

Put the bread onto a lightly floured baking tray . Cut a deep cross in the top ( to let out the devil ) use a serated knife to do this

Cook for 45-50 minutes . When cooked the bread should sound hollow when tapped in the bottom

Put on a cooling rack for crusty crust , if you want it soft(er) wrap it in a clean tea towel
