Sticky Ginger Cake

A warm spicy sticky cake

Yields1 Serving
 200g self raising flour
 200g Sugar
 2-3tspn Ground Ginger
 1 tspn Bocarbonate of Soda
 2oz butter or margarine
 1 beaten egg
 3 tbspn golden syrup
 240ml hot water ( from the tap)
 2 -3 pieces stem ginger , chopped and a little of the syrup

Heat oven to 180C

Grease and line a 7" baking tin

Mix the dry ingredients in a bowl

Rub the butter into the mix so it resembles breadcrumbs

Stir in the egg, syrup and hot water using a wooden spoon

Stir in the ginger and a little syrup

Pour the mix ( it will look like batter ) into the prepared baking tin

Bake for 35-40 minutes

Allow to cool in the tin

When cool cut into squares

Can be served warm with custard as a dessert or cold as a cake
