Sweet potato , red pepper and tomato soup

Yields4 Servings

 Oil or frlight
 1 Onion diced
 Sweet potatoes peeled and chopped
 2 Pointed peppers chopped
 1 tbsp Italian Seasoning
 0.50 tsp Smoked paprika
 Pinch salt
 Pinch pepper
 1 Carton passata
 Balsamic vinegar
 1.50 pt Hot water

In a pan or in your pressure cooker heat the oil . Add in the onion and saute
Add in the potato and peppers . Sauté for about 5 minutes

Sprinkle over the Italian seasoning and paprika , mix well

Add the passsata and water . Stir well .

Add the seasoning.

Simmer cook n the hob until the veg is soft (about 25 minutes )

Put the lid on the pressure cooker , set to soup for 8 minutes

Or put into the slow cooker and cook on high for 2-2.5 hours

Let the pressure cooker NPR .

Blitz the soup with a hand blender and serve drizzled with balsamic
