Sweet Souffle Omelette
Ingredients
4 Large eggs
Frylight or butter
Fresh or frozen berries
A little icing sugar
Directions
Heat oven to 190c
Separate the eggs and whisk the whites until stiff
Whisk the yolks until fluffy
Carefully FOLD the whites into the yolks until combined
Spray a pan with frylight or add a little butter and heat on the hob
Pour the mix into the pan and cook gently until the bottom layer a set
Scatter over your fruits and put in the oven until the fruit has ‚ 'popped' and the omelette is risen and set
Sprinkle over some icing sugar before serving.Delicious served with ice cream
