Teriyaki Glazed Spare Ribs

Spare ribs are a great bbq staple but if your not lucky enough to have a bbq don't despair as there's still an easy way to do them using your slow cooker. I've used some single short ribs which you often find going cheap at the butchers counter but this would work just as well for a rack of ribs just adjust the cooking time a bit.I've seared them first as I'm a great believer in searing the meat to give it flavour but you don't have to do that. You can just place them straight in your slow cooker and you will still get great results. The Teriyaki glaze is lovely but you can just use your favourite bbq sauce instead. The step by step guide will help you to make a yummy meal thats full flavoured, tangy and sweet with just a hint of chilli.  400 g Spare ribs
 1 tbsp Oil
 For the Glaze
 300 ml Water
 80 g Brown sugar
 70 ml Low sodium Soy Sauce
 2 tsp White wine vinegar
 1 Garlic clove chopped
 1 pinch Ginger paste
 1 pinch Chilli flakes (optional)
 2 tsp Cornflour
 1 tbsp Sesame seeds to garnish (optional)

heat the oil in a pan on a med/high heat and place the Ribs in to brown (sear)

Turn over after a minute or two until they are charred slightly and repeat till they are browned on each side

Switch on the slow cooker to low and place the ribs inside. You don't need to add any water

Make the glaze by adding the water into a pan, with the sugar,soy sauce,vinegar,garlic,ginger and chilli flakes.

Bring to a boil and simmer it until the sauce reduces. Add a little water to the cornflour and whisk with a fork to make a paste. add this to the pan and stir until the sauce thickens and becomes glossy and rich.

Pour into a bowl and allow to cool. Taste and adjust the seasoning- too tart add some sugar- too sweet add some vinegar or soy sauce.

brush the ribs with the glaze or pour over and toss them in it

Making sure they are fully coated. Any remaining glaze can be stored in the fridge for 7 days

Cook on low for 3-4 hrs or high for 2-3 hr
You can add more glaze if you wish.

Once cooked sprinkle over the sesame seeds and turn them till they are coated.

Serve with mashed potatoes and mixed veg. I fried onions,peppers and tomatoes in the pan I had used to sear the ribs so I got that lovely charred coating on them

This feeds 1 person but would work just as well for a family of 4 by adjusting the quantities.
If cooking a rack of ribs then cook for 6-8 hrs on low or 4-6 on high.
The glaze can be used for pork or beef as well as for chicken breasts if you like.
You could add some ketchup or tomato paste and some honey to make a sticky bbq glaze.Do use low sodium soy sauce or you will find the glaze too salty.
Swap brown sugar for white if you want
