Put flour and salt into a large bowl
Crack in the eggs and beat
Gradually whisk in the milk
Put in the fridge to rest ( ideally overnight )
Heat oven to 200C
Put the sausages into the oven
Take batter from fridge and whisk
When the sausages are browning add more oil to pan if needed
When the oil is smoking hot add your batter. It should start to sizzle immediately. Return to the oven
After 10 minutes OPEN the oven door just long enough for the steam to escape . Shut the door
Continue to cook until the batter is risen and golden , about 20-30 minutes
Serve with onion gravy and vegetables
