Tuscan chicken pasta

Beautiful dish with a delicious creamy sauce

 1 tbsp oil
 2 chicken breasts diced small
 1 tbsp italian mixed herbs
 2 tbsp minced garlic
 1 pack cherry tomatoes halved
 1 tin chopped tomatoes
 150 g soft cheese
 50 g double cream
 100 g parmesan or parmeggiano
 300 g pasta
 2 chicken stock cubes
 400 g spinach

Put your pot of water on for your pasta and once it begins to boil add the chicken stock cubes and stir until they have melted then add your pasta and italian herbs and cook as directed by the pack

Heat your oil in a large pot and add your chicken. Season the chicken with salt and pepper and then brown

Remove chicken from the pot and set aside

Add the garlic and cherry tomatoes and cook for 1 minute

Add the cream cheese, cream and tinned tomatoes and stir through

Add the chicken back in to the pot, reduce the heat and cook for 10 minutes

Drain the pasta, reserving one cup of the cooking stock and add to the pot along with the cooking stock, spinach and parmesan

Stir through and allow to cook for few minutes until the sauce has thickened and the spinach has wilted
