Vegetable Korma

We do love a curry and a Korma is one of our favourites. It's mild creamy sweetness is family friendly and you can adjust the heat to the levels you like. I've paired back the spices as I find that Garam Masala contains most of the main ingredients you'll find in most Korma recipes. This of course makes it more purse friendly, but we have a Korma paste recipe on the website if you'd rather use that. This vegetable korma is filling and flavoursome.  350 g Mixed Veg(carrot,sweetcorn & broccoli)
 250 g New Potatoes
 2 Onions
 1 Pepper (mixed)
 100 g Cherry tomatoes
 1 Tin of Coconut Milk(400g)
 2 tbsp Porridge Oats
 1 tbsp Dessicated Coconut
 100 g Spinach
 3 Garlic cloves
 1 Piece of Ginger
 2 tbsp Garam Masala
 2 tbsp Turmeric
 1 tbsp Brown sugar
 200 ml Veg stock
 1 tbsp Oil

Prep:-
Wash and halve the potatoes.
Chop the Onions.
Slice the Pepper
Grate the Garlic and Ginger.
Shred the Spinach.
Halve the Tomatoes

Mix the spices and sugar together -(garlic,ginger,garam masala,turmeric+brown sugar)

Add the oil to a pan on a medium heat, add the onions and fry till soft

Add the spices and mix through.
Lower the heat

Stir till they are fully coated in the mixture.

Add the Peppers.

In a separate pan Parboil the veg and potatoes till just soft (10-15mns)
Drain. You can remove the broccoli and set aside till 5 mns before serving as I find it breaks up too much (optional)

Add the veg to the onion mix.
Add the Coconut milk and stock.

Stir through and bring to the boil.

Add the oats and stir through. Lower the heat & Simmer for 10mns

Once the sauce thickens lower the heat a little more .
Add the broccoli from earlier.

Add the dessicated coconut.

Add the Spinach.
Gently stir through.

Add the tomatoes

Taste and adjust the seasoning if needed. My sauce is too thick so I added some milk,but if it's too thin? add some more oats-they will dissolve in 3-4 mns.

Serve hot with a garnish of Spring onions.

Serve with crackers and bombay mix on the side.
I didn't serve with rice as there's potatoes in the dish but you can serve with some if you prefer.

Easy Swaps:-
Coconut milk for cream.
Brown sugar for white.
Cherry tomatoes for salad tomatoes.
Spinach for Coriander.
Oats for rice.
