Balsamic chicken with roasted potato slices

You can add any veg you like to this dish

  • Yields: 4 servings


3 chicken breasts -diced

A selection of vegetables cut to the same size as the chicken

3 tblspns balsamic vinegar

1 tblspn olive or rapeseed oil

3 large potatoes washed and cut into 1cm discs

Sea salt

Black pepper

A splash of oil


1Mix the balsamic and olive oil

2Put the chicken and veg in a large bowl .

3Pour over the balsamic mix and coat everything well .

4Leave to marinate for at least 30 minutes - you could make this and then bag and freeze .

5Heat oven to 200c

6Put the potatoe slices in a bowl toss in the oil and sea salt and vinegar

7Put them in a single layer on a baking sheet and place on top shelf of the oven

8After they've been in 15 minutes. Put the chicken and veg in a tray and place under the potatoes

9Cook both for 30 minutes , turning the potatoes and chicken once


I used onions and peppers . Courgettes, tomatoes , leeks , aubergines , butternut squash would all work too

Tried this with red pepper, onion and courgette. Tasted amazing the potatoes were fantastic clean plates around, will deff do this again as it was so easy.
