Braised leeks in orange juice

A knob of butter

2 leeks

A few picked thyme leaves

Juice of 1 orange ( or some orange juice from a carton )

Zest of 1/4-1/2 an orange


1Finely slice or dice your leeks

2Melt the butter in a frying pan

3Add the leeks and sauté for about 5 minutes

4Add the thyme leaves , orange juice and zest

5Cover with some damp greaseproof paper

6Cook on low until all the liquid is evaporated
