Chicken Burgers

2 large chicken breasts ( muscle foods ones are ideal )

2 tblspn plain flour

2 beaten eggs

120g of breadcrumbs ( Panko ones are great )

Salt and pepper

Seasoning of choice , paprika , oregano , cayenne , southern fried

4 soft round rolls ( brioche rolls are great )

Some shredded iceberg lettuce

1 sliced red onion

1 large beef tomato sliced

Mayonnaise ( flavoured if you like )


1Cut the chicken breasts into 2 as though butterflying but cut all the way through

2Put the flour onto a plate season with salt and pepper and any other seasoning you are using

3Put the breadcrumbs onto another plate and your whisked eggs into a shallow dish

4Dip the chicken breast in the seasoned flour , then egg then breadcrumbs

5Grill or shallow fry until cooked on both sides

6Serve in a toasted bun topped with mayonnaise and then the salad items
