 1tblspn oil
 1 chicken breast
 1 diced onion
 1 red pepper sliced thinly
 2 crushed garlic cloves
 75g chorizo sliced
 2 tblspn Cajun spice or smoked paprika
 500g rice
 Tin of chopped tomatoes
 700g chicken stock

Heat the oil in a large pan

Add the diced chicken and brown for 5-8 minutes

Move the chicken to s plate

Add the onion and cook for 3-4 minutes

Add in the peppers , garlic, chorizo and spice and cook for a further 5 minutes

Add the chicken back in with the rice , tomatoes and stock .

Stir well to combine and cook for a further 30-45 minutes until the rice is cooked and liquid is absorbed
