Chicken Parmesan Pasta Bake

12oz penne pasta

A couple of handfuls of roast chopped chicken

1.5 tins chopped tomatoes or better still a pint of hidden veg tomato sauce

8oz grated mozzarella

4oz grated Parmesan cheese

2 minced garlic cloves

Salt and pepper

0.5 bunch chopped basil


1Heat oven to 190c

2Cook the pasta in boiling salted water

3Drain and reserve some of the pasta water

4Put the pasta back in the pan , add the garlic tomatoes, salt , pepper and chicken . Stir well

5Pour half this mix into a casserole dish . Top with half the mozzarella . Pour the remaking pasta mix on top add a little of the pasta water. Now top with the remaining mozzarella and all the Parmesan

6Put in the oven and bake for 30 minutes

7Scatter over remaining basil before serving with a salad and garlic bread
