Golden Syrup

Golden Syrup isn’t readily available in the US .
So make your own

  • Prep: 5 mins
  • Cook: 1 hr
  • Yields: 1.5 pints



100g white sugar

25ml water


500g white sugar

300ml boiling water

2 tbsp lemon juice


1In a pan over a medium heat swirl together the caramel ingredients.

2Do NOT stir as this may cause it the crystallise

3Let it darken and thicken

4Dissolve the sugar in the water

5Add the lemon juice

6Mix well

7Pour into the caramel mix - be careful it will spit

8Allow the mix to simmer for about 45 minutes

9At this point it will be a golden colour and a little runnier than honey

10Pour into sterilised jars

11The syrup will thicken on cooling

If the syrup is too thick let it down with a little sugar syrup
If it is too runny return to the pan for a bit longer
