Homemade chicken stock

Use in soups and gravies

  • Prep: 5 mins
  • Cook: 4 hrs 15 mins
  • Yields: 2 bags


1 or more chicken carcasses

2 sticks celery, roughly chopped

2carrots, roughly chopped

1 onion, roughly chopped

1 bunch fresh parsley ( optional )

2 bay leaves

6 peppercorns


1Put everything in a large pan .

2Top with water

3Bring to the boil

4Simmer for a 3-4 hours or cook overnight in a slow cooker


6Cool in fridge

7Remove fat from the top

8Freeze in portions

For a darker stock leave the skin on the onions
