Individual microwave sponge puddings

You can use whatever combination of ingredients you like . Make a plain sponge and put jam or golden syrup in the base of the ramekin . Add some coconut, lemon curd and lemon peel or even replace 25g of flour with cocoa and pup a square of chocolate into the middle of the mix


2 eggs

125g caster sugar

125g butter

2 tbspns milk

Handful of currants ( or to taste , I like lots )

125g self raising flour


1Use an electric whisk combine the sugar , butter , flour , eggs and milk

2When combined stir through the currants

3Grease four ramekins or cups

4Pour the mixture into them

5Cover with cling film

6Put in the microwave and heat for about 4 minutes ( check after 3)

7Turn puddings into a dish and serve with custard
