Individual microwave sponge puddings

You can use whatever combination of ingredients you like . Make a plain sponge and put jam or golden syrup in the base of the ramekin . Add some coconut, lemon curd and lemon peel or even replace 25g of flour with cocoa and pup a square of chocolate into the middle of the mix

 2 eggs
 125g caster sugar
 125g butter
 2 tbspns milk
 Handful of currants ( or to taste , I like lots )
 125g self raising flour

Use an electric whisk combine the sugar , butter , flour , eggs and milk

When combined stir through the currants

Grease four ramekins or cups

Pour the mixture into them

Cover with cling film

Put in the microwave and heat for about 4 minutes ( check after 3)

Turn puddings into a dish and serve with custard
