Lyonnaise Potatoes

1kg Potatoes

2 large onions thinly sliced

100g butter

Salt and Pepper


1Peel and very thinly slice the potatoes ( again I use a mandolin )

2Heat the oven to 190C

3Melt the butter in a frying pan over a low heat

4Add the onions and fry for about 5 minutes or until cooked but not coloured

5Add in the potatoes

6Season well with salt and pepper

7Turn the potatoes occasionally

8Cook until just starting to colour

9Put them into a baking dish

10Cook for at least an hour or until the top is crimping and the other layers are soft

potatoes and onions , what’s not to like ?
