Madeira Cake

4oz butter

4 oz caster sugar

2 tblspns golden syrup

2 eggs

6oz SR flour

1 tspn baking powder

1 tspn vanilla extract


1Heat oven to 180C

2Grease and line a1lb loaf tin

3Cream butter and sugar until light and fluffy

4Add in the golden syrup and eggs ( 1 at a time ) beating after adding each egg

5Add the vanilla

6Now add the sieved flour and baking powder

7Mix well, pour into prepared tin

8Bake for 30 minutes until risen and golden brown

9Cool in tin for 5 minutes before turning onto a cooling rack

10Serve in slices
