Mango Salsa

1 mango chopped

1 red onion chopped

1 pepper chopped ( any colour )

A few coriander leaves and stalks ( chopped )

A few sliced mint leaves

Juice of 1 lime ( to get more juice from your lime microwave it for 10-15 seconds before juicing

A good dash of olive oil

A chopped red chilli ( use as much or as little as you like )


1Put all chopped ingredients into a bowl

2Squeeze over the lime juice

3Add a dash of olive oil

4Mix well and chill in fridge for at least an hour before serving

5Lovely with fajitas or a bowl of nachos
