Mini sponge cake

Fill with any jam and cream.

  • Yields: 8-12

Ingredients

175g sugar

175g s/r flour

175g butter

3 eggs

1/2tsp vanilla

200ml double cream whipped

Jam.

Directions

11. Pre heat the oven to 180d

22 Cream the sugar and butter together till pale and fluffy

33. Mix the beaten eggs and flour a little at a time till all combined

44. Spoon mixture into muffin tin or cases .

55. Bake for 15 mins

66. Let cool then cut in half and spoon cream and jam.

Perfect for a pic nic or a party
