Mixed pickles

1kg of mixed fresh veg ( cauliflower, corgettes, beans , baby onions carrot etc )

60g table salt

Sarsons white pickling vinegar

Optional : a few slices of chilli , fresh dill


1Prepare the veg and cut into small pieces

2Put into a large bowl and sprinkle over the salt

3Put aside for 24 hours

4Rinse and drain the veg thoroughly

5Pack into sterilised jars

6Cover with the vinegar adding the chilli and dill now if using

7Seal and leave for at least a month before using
