Oaty Banana Muffins

Great to use over rip bananas

 200g plain flour
 80g porridge oats
 100g caster sugar
 2 tspns baking powder
 1 tspn bicarbonate of soda
 1/2 tspn salt
 1 egg
 175ml milk
 75ml vegetable oil
 1/2 tspn vanilla extract
 250g mashed bananas

Heat oven to 200c

Lay 12 muffin cases into a tin

Mix the flour, oats, sugar, baking powder, bicarbonate of soda and salt in a bowl

In a larger bowl, lightly beat the egg

Stir in the milk, oil and vanilla.

Add the mashed banana and combine thoroughly. Stir the flour mixture into the banana mixture until just mixed

Pour the batter into the cases

Bake for about 20 minutes

Cool on the tin for 5 minutes, then put on a wire rack to finish cooling
