Onion Bhaji

These go well with most Indian dishes

Yields1 Serving
 2 eggs
 2-3 onions , thinly sliced
 1 tspn ground ground coriander
 1 tspn cumin seeds
 4oz plain or gram flour
 Oil to fry

Whisk the eggs in a bowl

Add the onions

Stir to coat in the egg

Add in the coriander and cumin

Add the flour and mix well

Heat a little oil in a large frying pan

Put spoonfuls of the mixture into the pan

Fry for about 1 minute

Turn over and fry again until coloured

Drain on kitchen towel

Add more oil if needed and fry the remaining mixture

Serve as a starter or with your meal
