Potato Galette

Ingredients

1lb of peeled small potatoes

About 4 tspns olive oil

Salt and pepper

Directions

1Heat oven to 220C

2Grease a baking tray with about 1 tspn of the oil

3Very thinly slice your potatoes ( a mandolin is great for this but it can be done with a sharp knife

4Run the slices under cold water

5Drain and put them in a bowl

6Add the remaining oil and seasoning and toss well to coat

7Arrange the slices on the baking trays in overlapping circles. You can make 1 big one or 4 smaller ones

8Bake in a hot oven until tender and golden ( about 25-30 minutes )

9Serve
