Strawberry Mille Feuille

1 packet of all butter puff pastry

400g punnet of strawberries

350ml double or whipping cream

2-3 drops vanilla extract

2 tblspns icing sugar

Extra icing sugar to decorate


1Heat oven to 220C

2Line a flat baking sheet wth parchment or greaseproof

3Roll out the pastry and cut into 3 equal sized rectangles

4Place on the baking sheet and prick all over with a fork

5Put in the oven and bake for 15-20 minutes . When cooked remove from the oven and cool on a wire rack .

6Meanwhile slice the strawberries , cut a few in half for decoration

7Whisk the cream , vanilla extract and icing sugar together to form soft peaks

8Stir through the cut strawberries

9When the pastry is cool , place 1 layer on the plate . Top with half the cream and strawberry mix, top with another pastry section then more strawberries and cream . Finish with the nicest pastry on top

10Sprinkle on ver lots to f icing sugar and decorate with the halved strawberries
