Tomato and onion gratin

4 tomatoes quartered

A small pack of cherry tomatoes

2-3 red onions cut into wedges

2 garlic cloves grated

A good handful of breadcrumbs

Salt and pepper

1 tspn dried mixed herbs

Drizzle of olive oil


1Heat oven to 200C

2Mix the tomatoes and onions in an ovenproof dish

3Stir through the grated garlic

4Mix the herbs with the bread crumbs and drizzle on a little oil .

5Season tomatoes and onions with a little salt and pepper, drizzle on a little olive oil

6Sprinkle the breadcrumb mix over the veg

7Bake on top shelf for 30-40 minutes
