Seafood Pasta

A speedy and delicious lunch or dinner

 160 g Spaghetti
 1 Pkt of Seafood selection 230g
 1 Pepper diced
 ½ Leek chopped
 200 ml Chicken stock
 1 tsp Dill or mixed herbs
 1 Handful of chopped chives
 3 Garlic cloves chopped
 80 g Butter
 100 g Spinach
 1 tsp Oil
 2 dashes Lemon juice
 1 pinch S&P

Boil a pan of salted water and pop your spaghetti in and cook for 8-10 mns

Heat the oil in a pan on a low heat and fry the leek and pepper till soft

Add in the seafood mix,stir gently through then add the stock and simmer for 3-4 mns

In another pan melt the butter on a low heat and add the garlic, herbs including the chives and lemon juice

Add the spinach and mix through till coated in the garlic butter

Add this mix to the seafood pan and stir through

Drain the Spaghetti and add to the seafood pan

8

Mix through till the pasta is coated in sauce. Season with S&P if needed

Serve warm with crusty bread

You can swap the seafood mix and use just prawns or seafood sticks or mussels

  1. Wow……I have just made this for dinner. It was more tasty than I could have imagined. Initially when I noticed there wasn’t any cream in the recipe I thought ‘this might be a wee bit iffy’. Followed your recipe to the letter, so glad I did.
    I had this with black bean spaghetti……I find it healthier than the regular pasta and the contrast in colour was perfect. I plan to make Minestrone soup and the Cowboy Stew (I think that’s what it’s called). Will let you know how I get on.
