It's basically a Lasagne without the pasta
Some villages use a combination of aubergine, meat sauce, and bechamel sauce....some use courgettes, meat sauce and cheese sauce, and some top it off with sliced potatoes.
It's no less delicious, whichever method is used.
I've gone down the courgette route with a few tweaks along the way, using some extra vegetables from the fridge- summer squash and carrots, and substituting leek for onion, and a bechamel for a cream cheese sauce instead, as thats what I had in my fridge.
Its a very forgiving recipe that means you can also swap ingredients that you and your family prefer, to ensure it becomes a firm favourite at mealtimes. .
I've used the Ninja Foodi, but this can be done in the oven or slow cooker.

Eve x00Chocolate Crispy CheesecakeI don't know a child (or adult) who doesn't love chocolate crispy cereal.
Its the only cereal my son eats, so I decided to make them into a cheesecake for his birthday as he doesn't eat sponge cake.
It's quite a simple recipe and there's a few steps from making the base, the cheesecake itself, and the decoration, but it's totally worth it, as I'm sure the whole family will love it. Letting the children help will make it a fun activity for them and you don't have to worry about getting it perfect either.
You can of course use other cereal if you wish, swap out the mascarpone for any cream cheese and leave the decoration plain. The choice is yours.

It's quite versatile too, as you can add chocolate, fruit, or nuts to give a little variety. It's a lovely treat with a cuppa or as a quick breakfast choice and is a great lunchbox addition too.
I've used the Air fryer but you could use your oven or slow cooker too, and you'll find directions at the bottom of the page.

I used undyed Smoked Haddock as its so much nicer than the dyed one, but if thats all you can get then its fine to use.
This is such a filling soup and I'm sure your family will enjoy and ask for often.

00Garlic Butter SpaghettiNormally, we focus on meals for families, but occasionally, we get asked for meals to suit 1 person.
This is my favourite 1 portion meal that is ready in under 15 minutes, and can be as simple or as complex as you want. It can be adjusted to feed as many as you wish and adapted to use whatever you have in the fridge at the time. My favourite optional extra is King Prawns if I get them reduced. Eve x
