It can be served as its prepared using all the ingredients or adapted to make 2 meals by removing 1-2 of the Chicken breasts after cooking and using for another meal-(these can then be added to pasta or sliced for a salad or sandwiches), then shredding the remaining breasts to make them go further. We are real advocates of substituting what you need for what you have. Hence the Hotdogs instead of mince and the beans instead of another tin of tomatoes. I bulked it out with a few regular sausages too but you can easily just use all of one kind if you prefer.This turned out delicious,filling and fairly cheap which again is our mantra. I think the kids will love it but its suitable for all the family. Its really just sausage and bean lasagne but Ive called it Cowboy Pie Lasagne as its more fun. Roast beef, roast potatoes and Yorkshire puddings are one of our favourite combinations, and once you’ve cracked how to make the perfect beef joint, you will never look back.
From lavish to thrifty, a hunk of roast beef spans all the budgets, and is simpler to cook than you think especially in the Slow Cooker as it does most of the work for you and no need to baste continuesly as you would in the oven. I've given the timings for a medium cook here but if you want it Well done -add an extra hour or Rare- subtract 1 hour. 00Slow Cooked GammonGammon is a great staple to serve midweek and is relatively cheap. Even a small joint can feed 4 with enough scraps left over to add to soups or pasta. Most people think of poached egg or pineapple as an accompaniment but I love peaches.The sweetness cuts through the saltiness of the ham and they caramelise beautifully in the heat of the SC making their flavour more intense. I used Loin steaks as they are economical but you could use chops or medallions. I also used my own stuffing (recipe on the website) but a pkt of stuffing is fine too. This is quite a substantial meal so its a good alternative to a Sunday Roast, but don't be afraid to cut it in half and serve in portions if you prefer- especially for the children where this amount of meat may be too much..
